Product Details

1. Product Introduction

Wheat oligopeptides are proteins extracted from natural food-wheat protein powder, and then obtained by directed enzyme digestion and specific small peptide separation technology.

Wheat protein can obtain wheat oligopeptides with higher purity under the joint action of complex enzymes, and the content of amino acids in oligopeptides is higher than that before hydrolysis. In comparison, the content of hydrophobic amino acids in this product increases more, and the antioxidant capacity increases with the increase of hydrophobic groups. FTIR structure analysis shows that these oligopeptides have characteristic absorption peaks at 1 290~1 330 cm~(-1) and 1 695~1 660 cm~(-1), indicating that set oligopeptides contain an α-helix structure Conformation, among them, the structural conformation of β-turn is dominant. The experiment selects the oxidation-free radical scavenging ability method to verify the antioxidant ability.
